The Shinobu Distillery
Shinobu Distillery is located in Niigata, Japan, a region renowned for its abundant "water sources," "white rice," and "sake." Niigata is famous for its heavy snowfall in winter, as cold air masses from the continent sweep across the Sea of Japan, bringing moisture that accumulates as thick snow in the mountains. When summer arrives, the snow melts, flowing into rivers and ultimately becoming the pure water source that nurtures the fertile soils of Niigata. This naturally pure and sweet water, combined with the region’s rich resources, creates an ideal environment for a whisky distillery.

The Shin 15 Years Old Whisky is a refined blend of tradition and artistry, expertly crafted by master blender Ken Usami at the Shinobu Distillery. This whisky is aged for over 15 years in Sherry and Bourbon Casks, allowing complex flavors to develop, and is then meticulously finished in Japanese Mizunara oak barrels for an additional 6 months.

Named in honor of Mr. Hiraishi, the eighth generation of Eigashima Shuzo, this distinguished whisky reflects a legacy of exceptional craftsmanship. Crafted by the Toji, the chief executive of the Eigashima sake brewery, it embodies the gentle, smooth texture uniquely characteristic of Japanese whisky. The spirit undergoes are fined aging process of three years in a carefully curated Blend of sherry, bourbon, and Japanese shochu Casks, each imparting its distinctive influence. Aged for two years in exbourbon and ex-sherry Casks, the whisky is then meticulously finished for an additional year in rare Japanese Shochu Casks, imparting a distinctive character. Aged for five years in carefully chosen White Oak casks, it presents a rich, smooth texture complemented by a complex bouquet of aromas. The aging process begins with three years in Japanese Shochu Casks made from American Oak, then continues for two more years in ex-bourbon and ex-sherry casks, adding layers of depth and character. This masterpiece showcases the distillery’s dedication to quality and the art of whisky.
